rice crispy cakes & nests

Making rice crispy treats is one of the easiest baking recipes to do with kids as it requires no measuring, no weighing, no baking, and just three ingredients.

The recipe is widely available online (I think it even used to be printed on the back of the Kellog’s rice crispy boxes), but in a nutshell it’s just a case of melting a knob of butter in a pan, throwing in a few handfuls of marshmallows, and stirring them until they melt (on a low heat). Then pour some rice crisps or coco pops into the pan until it’s all mixed together, and then scoop it out onto a tray lined with baking paper.

Easter nests

To make a birds nest shape instead, pour the mixture into a muffin tray and use wet fingers to create a dent or hole in the middle of each one. We tried different methods but found that wet fingers was the quickest and easiest (and most fun, according to the 2 year old).

they never last long enough to take a photo!

Drizzle some melted chocolate over the top to make them extra naughty.

Fill them with some Easter eggs (we used Cadbury’s mini eggs) to make little Easter puddings.
